The BEST Dairy-Free Gluten-Free Lasagna

Thinking of new foods to cook and staying inspired in the kitchen can be a challenge, even for me. The other day I came across an amazing brand called Jovial and saw they had gluten free lasagna noodles. That got me thinking about how I could make an amazing gluten-free, dairy-free lasagna. Well here is what I made and it came out soooo good! Very excited to share this recipe and I hope you enjoy it too! 

Ingredients

1 jar of Primal Kitchen Vodka sauce 

1 package of Jovial Gluten Free lasagna noodles 

1 container of Kite Hill ricotta 

1 large zucchini, sliced into strips 

1 onion diced

1 package of ground turkey 

Instructions 

  1. Preheat oven to 375 degrees F. Set out a large baking dish (9×13 inch or similar size).

  2. In a medium sized skillet sauté onions and ground turkey until well cooked and then set aside. 

  3. To begin assembly, add a thin layer of marinara sauce to your 9x13 baking dish. Spread to ensure even distribution. Then add a layer of the pasta noodles. Top with a layer of your Kite Hill ricotta cheese and spread into an even layer.

  4. Add a layer of sliced zucchini and spoon out some of the ground turkey and onion mixture. 

  5. Cover with tomato sauce and follow previous steps to create another layer.  

  6. Cook on the middle rack of your preheated oven for 50 minutes uncovered, or until the sauce is bubbly and/or the edges are browned.

  7. Carefully remove from the oven and let cool 5-10 minutes before serving.

  8. Then slice, serve, and enjoy.
